Vegan Mac and Cheese

Butternut Squash Mac and Cheese

Nothing like some great comfort food, even when you’re vegan. The fact that it’s healthy for you is just a plus!

Shopping List:

  • 1 Small Butternut Squash (or bag of cubed butternut squash if you’re going to make it very soon)

  • 1 Cup Raw Cashews, unsalted

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • 1/2 Cup Nutritional Yeast

  • 1 Cup Plant Based Milk (we use Oat Milk)

  • 1/2 tsp Salt (to taste)

  • Smoke Paprika (garnish)

  • Rosemary (garnish)

  • 1 Box pasta of choice

  • High Speed Blender

Instructions (Serves 4):

  • Boil cubed squash for approximately 9 minutes (or until squash is fork tender)

  • Drain squash, add to blender

  • Add all other ingredients, except pasta

  • Blend until creamy

  • Make pasta according to instructions on box, drain and return pasta to pot

  • Add cheese to pot and stir together well

  • Season to taste (for a sharper “cheese” flavor, add a small amount of white vinegar)

  • Plate and sprinkle with Smoked Paprika and Rosemary to taste

Options:

  • Mix in air fried broccoli
