Vegan Mac and Cheese
Butternut Squash Mac and Cheese
Nothing like some great comfort food, even when you’re vegan. The fact that it’s healthy for you is just a plus!
Shopping List:
1 Small Butternut Squash (or bag of cubed butternut squash if you’re going to make it very soon)
1 Cup Raw Cashews, unsalted
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 Cup Nutritional Yeast
1 Cup Plant Based Milk (we use Oat Milk)
1/2 tsp Salt (to taste)
Smoke Paprika (garnish)
Rosemary (garnish)
1 Box pasta of choice
High Speed Blender
Instructions (Serves 4):
Boil cubed squash for approximately 9 minutes (or until squash is fork tender)
Drain squash, add to blender
Add all other ingredients, except pasta
Blend until creamy
Make pasta according to instructions on box, drain and return pasta to pot
Add cheese to pot and stir together well
Season to taste (for a sharper “cheese” flavor, add a small amount of white vinegar)
Plate and sprinkle with Smoked Paprika and Rosemary to taste

Mix in air fried broccoli
