Vegan Fried Rice

Nutrition doesn’t have to be boring! This vegan fried rice is packed with fresh ingredients and fragrant garnishes. It can be customized to fit your individual tastes and dietary needs. This is a great dish to try for new vegans!

Shopping List:

Ingredients

  • 2 Cups Whole grain brown rice

  • 3 Tbsp of Sesame oil and 1 Tbsp avocado oil. For WFPB use 4 Tbsp veggie broth

  • 3 Tbsp Just Egg (optional)

  • 1/4 small white onion, finely chopped

  • 2 medium carrots, finely chopped

  • 2 Cups Broccoli or Kale chopped small

  • 1 Cup Purple cabbage sliced small

  • 1/2 Cup frozen peas thawed in hot water

  • 1/2 Red pepper diced

  • 3 Cloves Garlic

  • Optional Pineapple bits

    Instructions

  • Measure out 2 cups of Whole grain brown rice and follow instructions on package for cooking. Upon cooking cover and set aside.

  • Cut, slice or dice veggies.

  • If using Just Egg measure 3 Tbsp and cook in separate pan.

  • Heat oil in skillet careful to not heat too fast. Sesame oil burns faster than heavier oils like olive. Toss in veggies and cooked until desired tenderness.

  • Add rice, Just Egg to skillet garnish with Cilantro, Green onion, Peanuts and Sesame Ginger Sauce
