Vegan Roasted Red Bell Pepper Hummus

Great for snacks and salads!

Great tasting vegan hummus for veggies, chips, and even salads. It’s creamy without any sugar!

Shopping List:

  • 1 15oz Cans of Chickpeas (Garbonzo beans)

  • 1 tsp Lemon Juice

  • 2 Cloves Minced Garlic

  • 1/3 Cup Tahini

  • 3/4 tsp Salt

  • 1/2 tsp Cumin

  • 2 Tbsp Olive Oil

  • 1/3 Cup Roasted Red Bell Peppers

  • Smoked Paprika (garnish, to taste)

  • High Speed Blender

Instructions:

  • Combine lemon juice and minced garlic in a bowl and set aside for 5 minutes

  • Mostly drain the can of Chickpeas, leaving about 20% of the juice (“Aquafina”) in the can

  • Combine chickpeas, lemon, garlic, 1 Tbsp oil, tahini and 1 Tbsp water into blender.

  • Run blender on low setting just until everything is mixed, but still a little chunky

  • Add remaining ingredients; salt, cumin, roasted red bell peppers, 1 Tbsp olive oil, 1 Tbsp water into the blender

  • Blend on high speed until well mixed

  • Sprinkle paprika on top

Options:

  • To make WFPB (Whole Food, Plant Based) - leave 50% aquafaba in can and pour in with the chickpeas. Substitute water for oil. Save the extra aquafaba and pour it in as needed to achieve the correct consistency.
